Letter from the editor, Kelly Rawlings: Getting a nutritious meal on the table for our family is a health-smart daily goal for many of us. When you or someone in your family has diabetes, healthful eating has to be a priority. But it's not always easy. I know because I have had type 1 diabetes since I was 4.
Like many couples, my husband, Mark, and I both work. So preparing satisfying fare that is nutritionally sound and workable with my diabetes meal plan is often a struggle. It becomes even more challenging when you add a 10-year-old boy to the mix! My son, Grant, likes to help in the kitchen. And he has learned to like foods that many kids wouldn't, such as polenta, salmon, and Brussels sprouts. OK, maybe Brussels sprouts not so much. But our rule is for him to try one bite of any new recipe, which exposes tastes using the familiar and perhaps not-so-familiar ingredients in these recipes. Each one is approved by our Test Kitchen as delicious, nutritious, and easy to make.
Sunday evening is my big night to cook several dinners for the week. That's why I love the make-ahead directions we've included with many of the recipes. You can have the dishes in the "Family-Pleasing Meals" chapter on the table in 30 minutes or less. We've also included a few slow-cooker recipes. A cookbook that keeps your meal plan goals in line and includes nutrition information is a real help in managing your diabetes. I look forward to serving recipes from this cookbook and hope you and your family will enjoy them too!
